Recommended for Year's Eve Soba: Shio Nuki Ya Salt-Free, Pure 100% 10-Buckwheat Soba, 3-Bag Set. Please note that 10-buckwheat soba has a very high aroma but is prone to breaking and is difficult to cook. Please understand this before purchasing. This is a carefully crafted soba made from 100% domestic buckwheat (Hokkaido, Yamagata Prefecture). It is "10-buckwheat soba," which contains no wheat flour or other binders. Note: 10-buckwheat soba has a completely different texture and flavor compared to regular soba that contains wheat flour. The "10-buckwheat soba" offers a gritty texture and a satisfying bite, with the rich aroma of buckwheat filling your mouth from the noodles that break easily. In contrast, regular soba with added wheat flour is less prone to breaking and has a smooth texture. Please confirm the differences in soba types and consider accordingly. 10-buckwheat soba is recommended for those reducing salt intake, as it contains no added salt (regular soba contains salt). We have blended carefully selected "stone-ground" and "roller-ground" buckwheat flour. The moist and aromatic "stone-ground" flour is blended with roller-ground flour that can be separated from the first to the third grade, achieving a unique texture and aroma. This product is the ultimate soba made from the first to the third grade of buckwheat kernels and the sweet skin. It uses the entire buckwheat kernel, which is characterized by its high aroma and nutritional value. With 10-buckwheat soba, the aroma of buckwheat spreads throughout your mouth. It is additive-free and safely produced in Nagano Prefecture. Please be cautious when cooking, as the soba can break easily due to the absence of wheat flour. The taste and texture may vary depending on the amount of water and boiling time, so please take care. For Year's Eve Soba: 10-buckwheat soba is considered good for Year's Eve. The meaning behind "10-buckwheat soba is prone to breaking is to avoid carrying over the hardships of the past year into the next."
